Recipes: Grilled Herb-Chicken

Some food looks good, some taste good, and some smell good! But sometimes we end up cooking something that satisfies all our senses and leaves us mesmerized.  When I first cooked this dish, I had a similar feeling. The amazing aroma of the herbs complimented the tenderness of the chicken perfectly and the dish also looked pleasing to the eyes.

Total Time: 65 mins


INGREDIENTS


2 standard chicken breast pieces

Finely chopped fresh lemongrass

Finely chopped fresh parsley

Finely chopped fresh Thai basil

Finely chopped fresh Coriander

1 tbsp of dried mixed herbs(link attached below for the brand I use)

1/2 tsp chilly flakes or powder(as per availability)

1 tbsp lemon juice

1/2 tsp salt(or as you like it, I am a miser when it comes to salt)

2-3 tbsp of olive oil(additional as required)

Two to three garlic cloves finely chopped.

1 tsp of soy sauce

1 tsp of barbeque sauce

1 egg.


DIRECTIONS


1. Beat the egg till the yolk gets mixed with the white. Add the lemon juice, chopped garlic, dried mixed herbs, chilly powder, or flake, and all the fresh herbs to the mixture and mix well, and your marination

2. Clean the chicken breast with cold water and draw incisions on the chicken breast.


3. Put the chicken and the mixture in a resealable bag and refrigerate the same for 15-30 mins according to your convenience, the later the better.

4. Add the barbeque sauce and soy sauce to the marinated chicken.


5. Heat a pan and grease it with olive oil. Place the chicken breast and start cooking it on medium flame.


6. Cover the chicken to create a vacuum and let it cook for 3-5 mins, repeat the same for the other side.


7. Open cook the chicken till it becomes brownish on both sides, insert a fork to check if it is cooked well inside.


Best served with a dash of lemon and some fresh coriander on top! Bon Appetit!



Note: The same dish can be replicated using Tofu, just the cooking time would reduce. Please make sure you don't overcook the chicken, which will lead to a rubbery texture.
