INGREDIENTS
2 slices of multigrain bread(any bread would work, I prefer multigrain)
1 cup of boiled corn
1/2 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp chilly powder
1/2 tsp cumin powder
1/2 an onion, finely chopped
1 tsp lemon juice
1/2 tsp salt(or as you like it, I am a miser when it comes to salt)
1 tbsp of olive oil(additional as required)
Finely chopped fresh coriander leaves
1 tbsp of cornflour
1 tbsp of rice flour
DIRECTIONS
1. Grind the slices of the bread to reach a coarse crumblike consistency.
2. Saving a few kernels for later, grind the boiled corn into a smooth paste. Don't make it too smooth though, a little coarseness brings a great texture. Running the corn in a grinder for a little more than 30 seconds does the trick!
3. Mix all the spices, lemon juice, the chopped onion and coriander, saved kernels, and the flour to the batter and mix well such that there are no lumps.
4. Add half of the ground bread to the batter and mix well. It will help to hold the fritters stay in good shape! 😉
5. Form circular disks, by rolling them on your palm and coat them well in the breadcrumbs.
6. Shallow fry the fritters until they turn golden brown. Enjoy!
