Recipes: Date Bombs

 Who doesn't get a craving for chocolates now and then? Well, I am guilty of it and I always ended up reaching for something unhealthy when it comes to my sugar cravings until I tried these date bombs. If you like chocolate, and or coconut-based sweets, don't look any further, these bombs will make your soul explode with happiness without impairing your health. My mother is diabetic and has sweet-tooth, and she loves that she has finally sorted her dessert needs well.

Yield: 6-8 servings

INGREDIENTS

10-15 Dates
3 tsp unsweetened cocoa powder
1/2 tsp cinnamon powder
1/2 cup of desiccated coconut
3 tsp of ground flax seeds
1/8 tsp salt

DIRECTIONS

1. Tear the dates into halves and remove the pits.

2. Soak the dates in warm water for 5 minutes.

3. Run the desiccated coconut, cocoa powder, cinnamon powder, ground flax seeds, and salt in a grinder or processor for half a minute.

4. Add the soaked dates to the mixture and grind it to reach the desired consistency. Stop occasionally to scrape down the sides.

5. Form the batter into 1-inch round balls. Enjoy!


NOTES

Optional: You can coat these balls in cocoa powder, coconut flakes, or finely chopped dark chocolate bits. I enjoy them without an external coating to achieve the maximum sticky fudge-y goodness without the chewing.

Storage: Store in the freezer for up to two months.
